Dinner (Sour Cream Chicken Enchiladas)

One of my favorite "easy" dinners to make is Sour Cream Chicken Enchiladas-  I make this as a casserole dish and it is so easy!  I am sure many people make this a little different but I will share how I do in case someone has never made these. 

INGREDIENTS: Chicken (I use breasts), Tortillas, Sour Cream, Cream of Mushroom & Cream of Chicken Soup, diced green chiles, & of course cheese (which I forgot in the first Picture!)
                                                                                            

Boil the chicken until it is cooked and let cool while you mix 1 can of each soup, diced green chiles, and large container (or 2 small) of sour cream.  Next, (hopefully chicken is somewhat cooler) tear it into bite size pieces and add to your soup mixture.


Cut the tortillas in to triangles.  I LOVE using the pizza cutter for this, makes it so easy.


Layer Tortillas on bottom of pan, add half the soup mixture and sprinkle with cheese.  Repeat once more so it is layered and top it off with LOTS OF CHEESE!!! We really like cheese :o)


Bake on 350 until cheese is melted and it looks a little golden/crispy around the edges.  I have heard many people will refrigerate until the next day as it is not quite so soupy but we eat it after I make it & the next couple days for lunch.

  1. That looks good! I'll have to try it - I've never been brave enough to attempt enchiladas but the ingredient list is right up my alley!

  2. We had a storm go through right at supper time, so it was leftovers and hot dogs for anyone being picky! This looks great, and I will try it soon!
